Chicken Enchiladas


Ingredients:

- 1 pound boneless, skinless chicken breasts

- 1 tablespoon olive oil

- 1 small onion, chopped

- 1 red bell pepper, chopped

- 1 green bell pepper, chopped

- 2 cloves garlic, minced

- 2 teaspoons chili powder

- 1 teaspoon ground cumin

- 1/2 teaspoon smoked paprika

- Salt and pepper to taste

- 1 can (10 ounces) enchilada sauce

- 1 cup shredded Mexican blend cheese

- 8-10 corn tortillas

- Optional toppings: sour cream, chopped cilantro, sliced avocado, diced tomato, sliced jalapeño


Instructions:

1. Preheat the oven to 375°F (190°C). Grease a 9x13 inch baking dish and set it aside.

2. Season the chicken breasts with salt and pepper. Heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook until browned and cooked through, about 5-7 minutes per side. Remove the chicken from the skillet and let it cool slightly. Shred the chicken into small pieces with a fork.

3. In the same skillet, add the onion, red bell pepper, green bell pepper, and garlic. Cook until the vegetables are softened, about 5-7 minutes.

4. Add the shredded chicken, chili powder, cumin, smoked paprika, and salt and pepper to the skillet. Stir everything together until well combined.

5. Pour about 1/2 cup of the enchilada sauce into the bottom of the prepared baking dish.

6. Heat the tortillas in the microwave or in a dry skillet until pliable. Spoon about 1/4 cup of the chicken mixture onto each tortilla and roll it up tightly. Place the enchiladas seam-side down in the baking dish.

7. Pour the remaining enchilada sauce over the enchiladas, making sure to cover them completely. Sprinkle the shredded cheese over the top.

8. Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.

9. Let the enchiladas cool for a few minutes before serving. Top with your desired toppings, such as sour cream, chopped cilantro, sliced avocado, diced tomato, or sliced jalapeño.
