Here is the indispensable croissant recipe of French cuisine


Ingredients:

2 cups flour

1 tablespoon sugar

1 teaspoon salt

1/2 cup cold unsalted butter (cut into cubes)

1 teaspoon active dry yeast

1/2 cup warm milk

1 large egg

1 tablespoon water

1 tablespoon melted salted butter

Powdered sugar (for serving)


Instructions:

Sift the flour, sugar, and salt into a large bowl. Add the cubed butter and mix it into the flour mixture with your fingertips until it becomes crumbly.

Mix the active dry yeast into the warm milk and stir. Crack the egg into a bowl and add water, then whisk together. Add the liquid mixture to the flour mixture and stir with a spatula.

Turn the dough out onto a floured surface and knead it for a few minutes until it becomes smooth and elastic. Roll it into a rectangle shape and brush the melted butter over it.

Fold the dough in thirds like a letter, then roll it out again and repeat the process two more times. Wrap the dough in plastic wrap and chill in the refrigerator for at least 30 minutes.

Preheat the oven to 400°F (200°C). Roll the chilled dough into a rectangle and cut it into triangles. Roll each triangle up from the wide end to the tip and curve the ends to form a crescent shape.

Place the croissants on a baking sheet and bake for 15-20 minutes, or until golden brown. Serve warm, dusted with powdered sugar if desired.
