Here is the recipe for the famous French chicken dish "Coq au Vin":


Ingredients:

1 chicken (about 3 pounds)

1/4 pound bacon, diced

12 small pearl onions

4 carrots, peeled and cut into small pieces

3 garlic cloves, minced

1 tablespoon tomato paste

1 tablespoon all-purpose flour

2 cups red wine (Burgundy or Pinot Noir)

2 cups chicken stock

1 bouquet garni (a bundle of herbs such as thyme, bay leaves, and parsley)

Salt and freshly ground black pepper


Instructions:

Preheat the oven to 325°F (165°C).

Cut the chicken into 8 pieces (2 legs, 2 thighs, 2 wings, and 2 breasts) and season with salt and pepper.

In a large Dutch oven, cook the bacon over medium heat until crisp, then remove with a slotted spoon and set aside.

Add the chicken to the bacon fat and brown on all sides, then remove and set aside.

Add the onions, carrots, and garlic to the Dutch oven and cook until tender, about 5 minutes.

Stir in the tomato paste and flour and cook for 1 minute.

Add the red wine and chicken stock, and bring to a simmer.

Add the bouquet garni, bacon, and chicken, and cover.

Bake in the oven for 1 1/2 to 2 hours, or until the chicken is tender.

Remove the bouquet garni and serve the Coq au Vin hot with crusty bread and a green salad. Enjoy!
