Recipe for Spanakopita


 Here's the recipe for "Spanakopita" or "Spinach Pie":


Ingredients:


1 package of phyllo dough

500 grams of spinach, chopped

1 onion, chopped

200 grams of feta cheese, crumbled or grated

Half a bunch of fresh dill, chopped

Half a bunch of fresh parsley, chopped

3 tablespoons of olive oil

Salt and pepper to taste

Juice of half a lemon

100 grams of melted butter (for brushing)


Instructions:


Wash the spinach and chop it. Heat the olive oil in a pan to sauté.

Add the chopped onion and sauté until it becomes translucent.

Add the spinach to the pan and cook until it wilts and any excess moisture evaporates.

Remove the cooked spinach from the heat and let it cool slightly.

In a large mixing bowl, combine the cooked spinach, crumbled feta cheese, chopped dill, chopped parsley, salt, pepper, and lemon juice. Mix well.

Preheat the oven to 180°C (350°F).

Unwrap the phyllo dough and lay a sheet on a clean surface. Brush it lightly with melted butter.

Place another sheet on top and brush it with butter. Repeat this process until you have a stack of about 5-6 phyllo sheets.

Spoon the spinach and cheese mixture onto one end of the phyllo stack, then fold the edges over the filling to form a rectangular shape.

Continue folding the phyllo dough over the filling until you reach the end, forming a tight roll.

Place the spanakopita roll onto a baking sheet lined with parchment paper, with the seam side down.

Repeat the process with the remaining phyllo dough and spinach mixture to make additional rolls.

Brush the tops of the spanakopita rolls with melted butter.

Bake in the preheated oven for about 25-30 minutes or until the phyllo dough turns golden brown and crispy.

Remove from the oven and let it cool for a few minutes before slicing and serving.
